Senior Design 05-06: Team 3
Cassava is quickly becoming a staple crop in Uganda, but processing is still done using old machines that waste resources. The CRWRC in Uganda has requested an improved system that will be more efficient and will collect the juice from the ground cassava. This is especially important because cassava is 60% juice by weight.
We will design an efficient machine that grinds clean, peeled cassava into a pulp. The juice will then be squeezed out and collected. At this stage, the cassava will be prepared for the final drying step that will complete the production of Gari. We will also try to decrease processing time and examine ways that the juice can be used.
